Grilled Sausage Salad {Foodie Friday}

Grilled Sausage Salad

As the weather gets warmer, our meals get cooler. It’s not often we crave soups, stews and casseroles during the summer months. We do, however, love a good salad and a good piece of grilled meat. Why not combine the two into a delicious bowl full of fresh summer flavors perfect as a weeknight meal or a BBQ take-along!

You will need:
2 grilled bratwurst
1 head of grilled romaine lettuce
1 cup of halved cherry tomatoes
1/4 cup of diced red onion
1/4 cup of black olives
1/2 cup of chopped artichoke hearts
2 Tbsp grated Parmesan cheese
2 Tbsp olive oil
1 Tbsp lemon juice
1/4 tsp sea salt
1/4 tsp black pepper
1/4 tsp garlic powder

 

  1. Grill the brats until they are fully cooked.
  2. Slice the brats into bite-sized chunks and add them to a large salad bowl.
  3. Cut the head of romaine in half and let it sit on top of the grill for 1 minute until it just begins to wilt and char.
  4. Remove the lettuce and slice it thin and add it to the bowl with the sausage.
  5. Add the tomatoes, onion, olives and artichoke hearts to the bowl and toss all of the ingredients together.
  6. In a small bowl whisk together the olive oil, lemon juice, salt, pepper and garlic powder to form a dressing.
  7. Pour the dressing over the salad and toss.
  8. Sprinkle the grated Parmesan over the salad and toss again.
  9. Serve as a meal or as a side dish at a BBQ.
