With school starting back up, and schedules as hectic as ever, we could all use a little help getting a relatively healthy dinner on the table. If you’re looking for a quick side dish for your Mexican entree, try this super easy rice recipe, made entirely in the microwave. You can spice it up with different kinds of salsa, or add black beans, chicken, beef, cheese, etc. to it after it’s cooked to make a complete meal. Enjoy!
Super Easy Mexican Rice:
1.5 cups white rice
2 cups water
1 cup salsa (any variety, preferably medium thickness)
Combine all ingredients in a large microwave-safe casserole dish, cover, and place in the microwave. Cook on High for 5 minutes, then on 50% power for 17 minutes (adjust for microwave strength). Voila! Easy, healthy side dish for your next Mexican dinner.
